Arugula Tomato Salad with Pine Nuts and Spiced Honey Dressing
Large salad for 2
For the salad:
1 ripe vine tomato, sliced in eighths
70 grams baby arugula
1/2 peeled carrot, cut into slivers with the peeler
1/2 tbsp pine nuts
4 cremini mushrooms (optional), thinly sliced
red onion (optional), very thinly sliced
For the dressing:
1/2 tbsp honey
1/2 tsp dijon mustard
1/4 tsp fresh ground pepper
1/4 tbsp extra virgin olive oil
Mix the dressing ingredients together in a small bowl with a fork. Pour dressing over the salad ingredients in a large bowl and toss until dressing fully covers salad. Serve immediately.
