Cauliflower Mash with Chick Peas

Serves 2

2 cups cauliflower
1 tsp garlic, minced
1/4 yellow pepper, diced
2 tbsp chick peas, soaked overnight and steamed for 15 min
1/4 cup of skim milk
1 tbsp extra virgin olive oil
Sea salt and fresh ground pepper to taste

Set the oven/ toaster oven to 350F.

Put everything except for the peppers in a high-powered blender. I use the Vitamix Series 300 and turn the speed up to level 2 and blend for 2-3 min. I like this dish with a little texture and so I don't over blend the cauliflower.

Next, transfer to a medium sized casserole dish and sprinkle the peppers over the cauliflower blend.
Bake in the oven/ toaster oven for 15 min, broil for another 5 min to brown the top layer.
