Colourful Cherry Tomato Salad

I love throwing together colourful and fun plates, especially when it's a healthy summer treat like this cherry tomato salad. This salad can enhance any meal as a side or on whole wheat or sour dough bread as an appetizer.

I enjoy the salad on bread as a light lunch paired with an avocado smoothie.

300 gr cherry tomatoes, assorted colours, halved
1/2 a small red onion, diced finely
sea salt and fresh ground pepper
a nice extra virgin olive oil. 

Toss everything together and mix well. Let it sit on the counter for 15-20 min. The salt not only seasons the tomatoes, it helps to draw out the juices from the tomatoes to marinate the salad.
