Guacamole with Tomatoes, Green onions and Pimenton
Guacamole is always tasty as long as very ripe avocados are used. I love green and red onions and so my recipe includes those plus ripe tomatoes with a sprinkle of pimenton to top off.

3 large, very ripe avocados
1 medium-sized, ripe tomato, diced
1 stalk of green onion, diced finely
1/2 small red onion, diced finely
1/4 cup cilantro, sliced thinly
1/2 lime
Sea salt and fresh ground pepper
Pimenton (smoked paprika) to sprinkle
Place the cilantro, diced tomatoes, red and green onions in a medium-sized bowl.
Remove the skin and seed of the avocados and place in the bowl with the other ingredients. Squeeze the lime juice into the bowl. With 2 forks, break apart the avocado, mashing lightly and mix the ingredients together. Add some salt and pepper to taste.
Refrigerate for 30-40 min covered in an airtight container, this allows for the ingredients to blend and enhances the flavours nicely.
Sprinkle pimenton and serve the guac with tortilla corn chips or spread on toast for a light lunch option.
