Crazy Cookies with Chocolate Chip, Craisins, Oats and Skor Bar


This is my killer cookie recipe. It is full-on SWEETNESS in a crunchy cookie. If you feel guilty, think of the oats... and the antioxidants (vis-a-vis the cranberries) that are in these. If you STILL feel guilty, sub the flour with up to 25% whole wheat flour - they will not disappoint.

I baked these cookies for my holiday virtual cookie recipe exchange party on December 16! It's my first virtual party AND my first time hosting and I am super excited to see what everyone else is bringing to the cookie party😊

Makes approx. 45 cookies

Bake time 12-14 min

1 1/2 cup all-purpose flour
1 tsp baking soda
1/2 cup white sugar
3/4 cup brown sugar
1 cup unsalted butter
1 egg
1 tsp vanilla extract
1 1/4 cup dry oats
4 Skor bars (chopped into small pieces)
1 cup Craisins (dried cranberries)
1 cup dark chocolate chips

In a large bowl, on low setting, mix together the butter and two sugars until light and fluffy. Add the egg and vanilla and mix. Sift the flour and baking soda into the bowl, slowly stirring it into the mixture with a wooden spoon or silicon spatula.

Once the flour is fully mixed in, add the oats, Skor bar pieces, Craisins and chocolate chips, ensuring it is combined well.

Refrigerate the dough for 20 min. Take the cooled dough out of the fridge and make small melon-ball pieces by rolling the dough in the palm of your hands and place onto baking sheet. The silicon baking sheets work wonders - I use silpat they are 100% non-stick.

Preheat the oven to 350F. Bake the cookies for 12-14 min, depending on how soft or crunchy you like your cookies.

After refrigerating the cookie dough for 20 min, make small melon-ball pieces and bake for 12-14 min
