Baby Kale Salad with Pine Nuts

Makes 2 large salads

100 gr baby kale, larger stems removed
1 cup grape tomatoes, halved
1/2 tbsp pine nuts, lightly toasted
1/2 tbsp honey
1/2 tsp dijon mustard
1/4 tsp fresh ground pepper
1 tsp lemon juice
1/4 tbsp extra virgin olive oil

Whisk the mustard, lemon juice, honey, oil and pepper together.

Toss the baby kale and tomatoes in with the dressing. Mix well and let it sit for 10 minutes so the kale leaves can soften in the olive oil.

Add the pine nuts to the salad and serve.
