Spicy Pork Belly Belgian Endive Wraps

Serves 4 ppl
3-4 belgian endives, leaves separated
3 tbsp gojujung (Korean chili paste)
2 tsp sesame oil
1 tbsp soy sauce
1 tbsp vinegar (more if necessary to soften the taste of the spice)
1 tbsp maple syrup
4-5 strips of pork belly or pork tenderloin, sliced
1 carrot, julienned
1 green onion, diced
Salt and pepper

Sprinkle some salt and pepper on the pork and cook for 4 min on each side. Be careful not to overlook as it can become chewy/ rubbery.
Mix 3/4 of the green onions, the gojujung, sesame oil, soy sauce, vinegar and maple syrup together. Save about half to use when serving the wraps and use the rest to coat the cooked pork.
Endive wraps can be filled with kimchi and rice in addition to the pork, carrots and green onions.
The wraps can be prepared in advance to serve or assembled at the time of eating.
