Matcha Marshmallow White Chocolate Cookies
This recipe is adapted from the Levain Bakery chocolate chips cookie posted by Modern Honey.
3 cups MINUS 3 tbsp all purpose flour, sifted
2 eggs
1 cup cold butter cut into small cubes
1 cup brown sugar
1/2 cup white sugar
1 teaspoon cornstarch
3/4 teaspoon baking soda
3/4 teaspoon salt
3 tbsp matcha powder
1/2 cup white chocolate chips/ chunks
1/2 cup small marshmallows
Pre-heat the oven to 410F.
Whisk sugars and butter for 4-5 min until fully incorporated and creamy (don’t shorten this process, it is important to blend the sugars fully to avoid tasting the crunch of the sugar).
Add eggs and whisk.
Sift together flour, baking soda, cornstarch, matcha powder, salt and add this to the liquid mixture.
Stir in marshmallows and white chocolate- mix everything until just combined- do not over-mix.
Form large dough balls, this makes 8-10 huge cookies. Bake for 12min.
Let rest for 10 min and dig in! Best enjoyed warm and reheated at 325F for 3-4min
